BEST SMOKED CHICKEN EVER! (My Dads Recipe)
For a Family of Four you can cut the recipe in half, but we always made two chickens so that we had left overs hehe.
2 whole chickens SPLIT in half (or you can use leg quarters and breasts)
You need 6 cups lemon juice
3/4 cup Lemon Pepper
Charcoal and a SMOKER
You need to clean your chicken meat. Put it into a zip loc bag I normally do 4 seperate bags one for each side of the chicken.
Pour your lemon juice onto the chicken and spread the 3/4 cup lemon pepper between the 4 sides of the chicken.
You want to make sure you seal the bags tight. The chicken needs to lay face down in the lemon juice and seasoning mixture. It needs to go into the fridge, and keep it there for 15-24 hours. Turn it about every 4 hours. You want to make sure that everything gets coated.
Get your smoker ready, and place your chicken meat side down on the smoker. Depending on the heat you can cook this in about 2 hours. But you will need to turn it as its cooking. The skin will become a beautiful golden brown. AND I PROMISE it stays so tender and juicy and you will definately WANT MORE. My dad made this for people and they beg me to make it for them again.
